We have more than 20 years experience with egg products. Our customers in Southeast Asia are in the food and ingredient business. Increasingly, food companies with central kitchens and retail formats are embracing the use of spray dried eggs as it takes up less valuable space, is practical and easy to use.
TYPES OF EGG POWDER PRODUCTS
There are three types of egg powder- Whole Egg, Egg Yolk and Egg White (available as High Gel and High Whip). Applications include replacing table eggs in baking, cooking, noodle making, processing of seafood and meats to battering and coating of fried products. Egg powder can be used as a dry blend together with other ingredients.

THE PROCESSING EQUIPMENT
To process egg powder, eggs are first sanitized to ensure cleanliness before they are broken with a sharp knife. This egg breaker can process 190,000 eggs per hour. The liquid yolk and white are separated and stored in large cooling tanks. Depending on the type of egg powder required the liquid eggs are blended, pasteurized, spray dried and packed.
KNOW YOUR CHOICES
In 2010, M&D partnered with the then Agri-food Veterinary Authority of Singapore (AVA) for a public education campaign to encourage the use of processed eggs as an alternative to table eggs. This involved in-store cooking demonstrations at supermarkets and community centres.
